Malibu Taco
So there is another taco restaurant on the scene. Something about Fairfield County, you can’t take a wrong turn without hitting a Mexican restaurant. Malibu Taco opened up at the start of the school year. The restaurant takes on a SoCal vibe, and boasts casual eating and a chill outdoor patio.
Aesthetic: 5/5 ★★★★★
Tables and chairs are cute and casual. Blue and White woven chairs add to the chill theme, while marble table tops heighten their trendy California vision. The inside is key—the bar is something you would find on your Instagram feed. A basket weave chandelier hangs in front of a wall of tequila, and the wrap around pink-accented bar counter perfectly matches the menu.

Our waitress was awesome and extremely attentive. As a new restaurant on the Post Rd. scene, their goal is to make you feel welcome. We were encouraged to eat family style, which we also recommend. Our waitress explained the menu well and answered any questions we had for her with ease. Super personable and easy-going!

As a new restaurant, I believe there are probably some kinks they’re still trying to work through after our visit to Malibu Taco. The guacamole was great, but the chips that came looked as if half were homemade and the other half came from a store bought bag. The Ahi Poke appetizer was not served with any sort of tortilla or wonton chip—something critical to the texture of the dish. The taco tortilla disks were a beautiful pink but could have definitely used some toasting or charring. Little details that could have made great differences.

With such high hopes for the new restaurant, I felt the dishes missed the mark on some of our expectations. The flavor was there but was nothing outstanding. None of the flavor profiles on our tacos were memorable. All tacos could have used differentiations in texture and added acidity to break up the flavors. The Mexican Street Corn was delicious but again there could have been a nice lime wedge on the side.
Malibu Taco is a great spot for drinks and a quick bite, and maybe just that. If you’re looking for the best authentic Mexican in Fairfield this isn’t it, but it also isn’t what Malibu Taco claims to be. If you’re in the mood for a trendy place, with buttons that say “Press for Cabana Service”, this is the spot for you.
